Chiayi's culinary identity revolves around shredded turkey rice. Unlike standard Taiwanese chicken rice, Chiayi cooks full turkeys, hand-shreds meat into precise cuts, and drizzles it with warm turkey lard and fried shallots over warm rice. The city's second signature is mayo cold noodles, flat wheat noodles topped with sesame sauce, cucumber, and sweet white mayonnaise. Finish your meals with soy milk douhua, tofu pudding served in cold soy milk instead of sugar syrup.

history
Chiayi began as Zhuluo, a Qing dynasty walled outpost. Japanese colonial rule transformed the town into Taiwan's forestry center after engineers constructed the Alishan Forest Railway in 1912 to extract cypress timber.During the 1930s, the city gained fame through Kagi Agriculture and Forestry School's baseball team. Modern Chiayi preserves its timber heritage through hundreds of surviving wooden structures and creative adaptive reuse projects.
Walled Settlement Established
Qing authorities build wooden palisades around Zhuluo, marking the earliest official Chinese county seat in western Taiwan.
Alishan Railway Opens
Japanese authorities complete the narrow-gauge logging rail, transforming Chiayi into Taiwan's main timber processing hub.
KANO Baseball Legacy
Kagi Agriculture and Forestry School wins second place at Japan's Koushien, making Chiayi a Taiwanese baseball stronghold.
228 Incident Impact
Chiayi Central Fountain becomes a focal point for civic resistance and post-war political demonstrations.
Art Museum Opening
The city converts the 1936 Tobacco and Alcohol Bureau into Chiayi Art Museum, spurring design-led urban renewal.
where to stay
Choose your base depending on your transport plans. Stay near TRA Chiayi Station if you have early train connections to Alishan or northern cities. Choose the Wenhua Road Core if you want midnight food access outside your door.
