Dining in Labuan Bajo revolves around fresh sea catch brought directly to the waterfront docks. Grilled snapper, grouper, and squid cooked over open coal fires dominate local evening meals. Traditional Manggarai dishes use cassava, corn, and fish broths with minimal spices.

Night market stalls open around 18:00. Popular fish varieties sell out by 21:00.
Try Kuah Asam, a clear fish soup spiced with tamarind, chili, and basil.
history
Labuan Bajo originated as a small fishing settlement for Bugis sailors from Sulawesi and Manggarai farmers from the Flores highlands. The establishment of Komodo National Park in 1980 shifted the local economy toward conservation and tourism. Recent government investment converted the commercial port into a dedicated marina facility.

practicalities
ATMs line Jalan Soekarno Hatta, but machines run out of cash on busy weekends.
Equatorial sun on open wooden boats causes fast burns. Bring coral-safe sunscreen.
Archipelago currents are severe. Snorkel only where dive guides advise.
Never enter dragon areas without an official park ranger carrying a wooden fork staff.
Pay tour operators in cash or complete bank transfers before departure.
