food

Red pods, green pods, and stacked enchiladas

Southern New Mexican cuisine is distinct from Tex-Mex and northern New Mexican cooking. Green chile here comes from the nearby Hatch Valley, roasted in tumbling mesh drums over open flames before being peeled and chopped. Red chile relies on dried pods ground into a smooth garlic-infused sauce rather than chili powder.Enchiladas in Las Cruces are served flat and stacked with corn tortillas rather than rolled. Restaurants will ask you 'Red or green?' Order 'Christmas' to receive half of each sauce across your plate. A fried egg placed on top softens the heat.

history

A short history

The Mesilla Valley was long inhabited by Manso and Mogollon peoples before Spanish colonial traders established El Camino Real de Tierra Adentro through the region. Las Cruces was founded in 1849 following the Mexican-American War on a grid surveyed by the U.S. Army. The nearby village of Mesilla briefly served as the capital of the Confederate Territory of Arizona during the Civil War. In the 20th century, the establishment of White Sands Missile Range and New Mexico State University transformed the agricultural valley into a research hub for defense and space technologies.
