Cecina and Tuscan river cooking

Pisan food relies on simple staples distinct from inland Florence. Local bakeries sell cecina, a thin, unleavened chickpea pancake baked crisp on top in large copper pans. Locals eat it hot inside salted flatbread, called focaccina con cecina. Pisan cuisine also features pappa al pomodoro, a thick soup made from stale unsalted Tuscan bread and tomatoes cooked in olive oil.

A short history

Pisa began as an Etruscan settlement before becoming a major Roman port. By the 11th century, the Republic of Pisa controlled western Mediterranean trade routes, generating wealth that funded the construction of Piazza dei Miracoli. Defeat by Genoa at the Battle of Meloria in 1284 ended Pisan sea dominance. Florence conquered Pisa in 1406, redirecting maritime trade while supporting the city's prestigious university.
