Taiwan

Tainan

Taiwan's ancient capital built on sugar, broth, and brick.

introduction

Overview

Tainan is Taiwan's oldest city and moves at a visibly slower pace than Taipei. You navigate its core on foot or by scooter, weaving through narrow alleyways designed long before motor vehicles existed. Food here leans sweet and centers on specialized single-dish stalls that close when they sell out. Expect heat, dense history, and early mornings spent eating hot soup.

HSR connection trick

High-speed trains arrive at Tainan HSR Station in Gueiren. Transfer to the local TRA Shalun Line train for a direct 22-minute ride into central Tainan Station.

The night market schedule

Night markets in Tainan rotate daily rather than staying open every night. Memorize the local mnemonic sequence to know which market operates on any given day.

food

Broth, fresh slaughter, and heavy sugar

Tainan cuisine is famous across Taiwan for its sweet flavor profiles, a legacy of the region's historic sugar monopoly under Dutch and Qing rule. Fresh beef soup is the city's signature dish, served from 04:00 using warm, un-frozen beef delivered directly from local slaughterhouses. Dining here revolves around single-item specialty shops where families have perfected one recipe over decades.

  • Eat beef soup before sunrise

Popular spots like Sixian open at 05:00 and sell out by 08:00.

  • Memorize the night market calendar

Garden Night Market operates only on Thursdays, Saturdays, and Sundays.

  • Order milkfish for breakfast

Try milkfish belly soup or pan-fried milkfish skin along Guohua Street.

history

A short history

Tainan developed as Taiwan's first urban settlement due to its natural shallow lagoon. Dutch colonizers established trade outposts here in 1624 before Koxinga expelled them to form the Kingdom of Tungning. The city served as Taiwan's capital for over two centuries until Qing authorities designated modern Taichung as the capital of the newly established Taiwan Province in 1887.

The Qing Dynasty annexes Taiwan and establishes Taiwan Prefecture with its seat at Tainan.

  4. 1887
