Matsuyama

Matsuyama is the largest city on Shikoku, built between Mount Katsuyama and the Seto Inland Sea. Matsuyama divides its signature sea bream dish into two regional traditions. Matsuyama-style taimeshi bakes whole bream with rice and soy in an earthen pot. Matsuyama developed as a castle town under Kato Yoshiaki in 1602. The settlement linked its military hilltop stronghold with the ancient hot springs of Dogo, creating a dual economy of samurai administration and bath house tourism.
