You can see the good past, and it seems something is being done to get back on track, but the current state is only adequate. Still, you can sleep well there. The restaurant is probably a revelation for meat lovers. The dining area is depressing and dark, and the open grill station, though intended to be scenic, doesn’t add to a good experience. It seems impossible to report small issues—like limescale in the shower head or non‑working lamps.
The location is great, but the room feels poorly furnished and the breakfast coffee is subpar.

We were on a bike tour and stayed one night at Waldshuterhof. The food was very fine, and breakfast was top. The rooms were currently being renovated and had small construction sites; a few lamps weren’t working, but that wasn’t a problem.
