Fujisawa's dining turns on shirasu, the local young whitebait harvested off the Sagami Bay coast. You eat it raw when fresh landings occur, or boiled over rice bowls known as shirasu-don. Restaurants around Katase Kaigan and Enoshima serve daily catches until sold out.
