Iquique

Iquique squeezed itself onto a narrow coastal shelf between 300-metre sand dunes and the Pacific Ocean. The city functions simultaneously as a duty-free commercial port, a surfing beach resort, and the historical terminus of Chile's 19th-century saltpeter wealth. You move easily along its north-south coastal axis on cheap shared taxis or by foot between the historic core and Cavancha beach.

Iquique’s culinary signature comes from its geography: Pacific deep-sea fisheries meet Atacama desert oases. At Mercado Centenario, lunch stalls serve picante de mariscos (spiced seafood stew with yellow chili and breadcrumbs) and fresh cojinoba fish fried whole. The city’s icon is chumbeque, a dense layered sweet cooked with lard, flour, and syrup flavoured with citrus or desert fruit from the nearby Pica oasis.

Iquique grew from a minor Peruvian fishing village into the world capital of saltpeter in the late 19th century. Chilean victory in the War of the Pacific (1879–1884) transferred the territory from Peru to Chile, generating immense wealth that built the city's wooden neoclassical civic architecture.
