food

Horseradish heat and giant tenderloins

Indianapolis dining centers on raw, aggressive flavors and unpretentious scale. The city's defining dish is the Indiana pork tenderloin sandwich. Kitchens pound a cut of pork loin until it reaches the size of a dinner plate, bread it in crushed crackers or flour, and fry it crisp. It arrives on a standard hamburger bun that covers less than a third of the meat. You eat the edges off first. The downtown steakhouse tradition revolves around heavy horseradish. St. Elmo Steak House has served its signature shrimp cocktail in the Wholesale District since 1902. The fiery red sauce relies on freshly grated horseradish root that delivers an immediate nasal burn. Local diners treat the dish as a required ritual before steak or chops.Modern food halls now balance these heritage traditions. The Bottleworks District converted a 1930s Coca-Cola bottling plant on Mass Ave into The Garage Food Hall. Dozens of local vendors sell smash burgers, Venezuelan arepas, and regional craft beers under original Art Deco tile ceilings.

history

A short history

Alexander Ralston designed Indianapolis in 1821 on a strict one-square-mile grid. He had worked as an assistant to Pierre L'Enfant in Washington, D.C., and imported the idea of central converging diagonal avenues. The city became the Indiana state capital because of its central position, even though the nearby White River proved unnavigable for major commercial steamboats.Railroads solved the transport challenge. By the mid-19th century, dozens of lines intersected at Union Station, turning the city into a major manufacturing hub known as the Crossroads of America. Auto pioneer Carl Fisher built the Indianapolis Motor Speedway in 1909 as an automotive testing track, giving birth to the city's global racing identity.
